🌶️ 1/4 teaspoon paprika
🌿 1/4 teaspoon ground cumin
🌰 1/4 teaspoon ground cinnamon
🫒 1/4 cup olive oil
🌾 2 cups barley semolina (Belboula)
💧 Water to fill 3/4 of the cooking pot's volume
Instructions
1- Combine Ingredients:
- In a large cooking pot, combine the chopped onions and chopped parsley.
- Add the following spices into the pot: salt, pepper, ginger, turmeric, paprika, cumin, and cinnamon.
2- Stir Mixture:
- Pour in the olive oil.
- Stir the mixture with a wooden spoon until the onions are soft and the spices are aromatic.
3- Boil Water:
- Fill the pot with water, ensuring it reaches 3/4 of the pot's volume.
- Increase the heat to bring the water to a rolling boil.
4- Cook Semolina:
- Gradually add the barley semolina to the boiling water while stirring continuously to avoid lumps.
- Reduce the heat and let the soup simmer for 20 minutes.
5- Serve:
- Stir occasionally until the barley semolina is fully cooked and the soup has thickened.
- Ladle into bowls and serve warm for a comforting taste of Morocco.
