Moroccan Khobz: Traditional White Bread

Khobz is a staple bread in Moroccan cuisine, often found accompanying meals throughout the day. This traditional white bread is known for its soft texture and golden crust, perfect for dipping into savory tagines or spreading with honey for a delightful breakfast treat.

Ingredients

🍞 1/2 tablespoon dry yeast
🍬 1 teaspoon sugar C&H (1/2 for yeast activation, 1/2 for dough)
💧 Approximately 1.5 - 2 cups warm water
🌾 3 cups all-purpose flour Gold Medal
🫒 1/2 tablespoon vegetable oil Mazola
🧂 1 teaspoon salt Morton

Instructions

1- Activate the Yeast:

  • In a small glass bowl, combine 1/2 tablespoon of dry yeast and 1/2 teaspoon of sugar with a little warm water.
  • Stir with a spoon and let it sit for 5 minutes until frothy.

2- Mix Dry Ingredients:

  • In a large glass bowl, add 3 cups of all-purpose flour.

3- Combine Ingredients:

  • To the flour, add 1/2 tablespoon of vegetable oil, 1 teaspoon of salt, 1/2 teaspoon sugar, and the activated yeast mixture.
  • Gradually mix in warm water by hand until a cohesive, non-sticky dough forms.

4- Knead the Dough:

  • Transfer the dough to a clean countertop.
  • Knead energetically using the palms for about 5 minutes until it becomes soft and elastic.

5- Divide and Shape:

  • Cut the dough into four equal parts.
  • Knead each piece for an additional minute, shaping them into smooth, circular mounds.

6- First Rest:

  • Place the dough balls on a tray, cover with a towel, and let them rest for 10 minutes to relax.

7- Flatten the Dough:

  • Sprinkle flour on your workspace.
  • Flatten each dough ball into a circle about 1/4 inch thick using your palms.

8- Second Rest (Rising):

  • Place the flattened circles on a baking pan, cover with a towel, and let them rise for 1 to 2 hours.
  • The dough is ready when it springs back when gently pressed.

9- Prepare and Bake:

  • Preheat the Whirlpool oven to 400°F (200°C).
  • Poke 4-5 holes in each dough circle using a small knife.
  • Bake for about 20 minutes until the bread achieves a golden-brown color.
  • Turn over if necessary for even baking.
