Ingredients
🥕 2 large beets, cooked, peeled, and grated

🥚 4-6 hard-boiled eggs, yolks separated and mashed, whites diced

🥛 1 liter of Lithuanian kefir or buttermilk, Brand if known
🌿 1 bunch fresh dill, finely chopped
🧅 1 bunch green onions, finely chopped (green parts only)
🧂 Salt
🌶️ Pepper
🥓 Bacon, cut into small cubes for cracklings
🥔 Potatoes, boiled
Instructions
1- Prepare Ingredients:
- Boil, peel, and grate the beets.
- Hard-boil the eggs, then separate yolks from whites. Mash yolks and dice whites.
- Finely chop dill and green onions.
- Grate cucumbers, squeezing excess liquid.
- Cube bacon for cracklings.
2- Create Soup Base:
- In the large mixing bowl, combine mashed egg yolks with a pinch of salt until creamy.
3- Combine Ingredients:
- Mix grated beets into egg yolk mixture.
- Add chopped green onions and grated cucumbers, stirring well.
- Fold in sour cream and kefir, ensuring a uniform pink color.
- Gently incorporate diced egg whites and chopped dill.
4- Season and Chill:
- Adjust seasoning with salt and pepper.
- Chill soup for at least 30 minutes to blend flavors.
5- Prepare Accompaniments:
- Fry bacon until crispy and golden in the frying pan.
- Boil potatoes until tender.
6- Serve:
- Ladle chilled soup into serving bowls.
- Accompany with boiled potatoes topped with cracklings and dill, served separately.
