Ingredients
🐟 3 kg Trout - Lake Sevan Ishkhan if available
🥔 700 g Potatoes
🧅 2 Onions
🌶 1 Bell Pepper
🍅 2 Medium Tomatoes
🌿 Fresh Herbs - Tarragon, Dill, Cilantro, and Parsley
🧂 Salt
🌶 Ground Black Pepper
🍃 Bay Leaves
🌿 Peppercorns
🧈 Butter
Instructions
1- Prep the Ingredients:
- Clean the trout thoroughly, removing scales and innards. Rinse under cold water and pat dry.
- Peel and slice the potatoes into thin rounds.
- Slice the onions, bell pepper, and tomatoes.
- Chop the fresh herbs finely.
2- Prepare Baking Dish:
- Preheat your oven to 180°C (356°F).
- In a large baking dish, arrange a layer of sliced potatoes as a base.
- Place the trout on top of the potatoes.
- Stuff the cavity of the trout with half of the herbs and some butter.
- Surround the fish with sliced onions, bell peppers, and tomatoes.
- Sprinkle the remaining herbs and peppercorns over the vegetables.
- Season with salt and ground black pepper.
- Add bay leaves for added aroma.
- Dot with butter over the top of the fish and vegetables.
3- Bake the Dish:
- Cover the baking dish with foil and place it in the preheated oven.
- Bake for about 40 minutes or until the fish is cooked through and the vegetables are tender.
- Uncover the dish in the last 10 minutes for a golden finish.
4- Serving Suggestions:
- Serve the Armenian Royal Fish Ishkhan hot, garnished with more fresh herbs on top.
- Pair with a refreshing salad or a slice of crusty bread.
