Ingredients
🐟 2.5 large trout, approximately 2.5 kg, cut into 3.5-4 cm thick pieces
🍋 1 whole lemon, sliced
🌿 3 bay leaves
🌶️ 0.5 tablespoon black peppercorns
🟤 0.5 tablespoon allspice (pimento)
🌿 1.5 teaspoons dried thyme/savory, Armenian citron
🧄 2 garlic cloves, unpeeled, slightly crushed
🧂 1.5-2 tablespoons salt
💧 Approximately 1.5 - 2 liters of water
🧈 20-30 grams unsalted butter
Instructions
1- Preparation:
- Clean the trout, remove entrails, and rinse thoroughly under cold water.
- Slice the lemon into thin rounds and halve some slices into wedges.
2- Setup:
- Place the 2 unpeeled garlic cloves and 3 bay leaves at the bottom of a large deep frying pan or skillet.
- Add the black peppercorns, allspice, and sprinkle the dried thyme/savory evenly in the pan.
3- Fish Arrangement:
- Cut the trout into pieces around 3.5-4 cm thick, discarding the tail if space is needed.
- Arrange the fish pieces in a single layer in the pan.
- Place a lemon slice inside each fish piece, and distribute remaining lemon slices around the fish.
4- Cooking:
- Add salt to the pan and pour in enough water to cover the fish completely. The water should taste slightly salty.
- Heat the pan on high until the water comes to a boil.
- As foam forms on the surface, skim it off carefully with a ladle or spoon and discard it.
- Add butter to the boiling fish.
- Cover the pan with a lid, reduce the heat to medium-low, and simmer for 30-35 minutes.
5- Finishing:
- Turn off the heat and leave the fish to rest in the hot broth with the lid on for 10-15 minutes. This allows the flavors to infuse deeply into the fish.
6- Serving:
- Place the boiled trout on a platter, garnishing with the cooked lemon slices for added visual appeal and flavor.
