Ingredients
🧅 2 medium yellow onions, diced
🫒 1 tablespoon oil of your choice
🥛 1 container Icelandic Provisions Oat Milk Skyr Plain, 24 oz 680g
🥜 1/4 cup raw cashews
🥜1/2 cup white beans (cannellini or navy)
🍋 Juice of 1/2 lemon, approximately 2 tablespoons
🧄 2 cloves garlic, minced or 1 teaspoon garlic powder
🧂 1/4 teaspoon salt
💧 1/2 cup water
🌿 1/4 cup chives, finely chopped
Instructions
1- Caramelize the Onions:
- Dice the onions into small pieces.
- Heat a Caraway Ceramic Nonstick Frying Pan over medium-low heat and add 2 tablespoons oil.
- Add diced onions to the pan and stir occasionally with a wooden spatula until they become deeply caramelized and dark brown, about 20-40 minutes.
2- Prepare the Dip Base:
- In a Beast Blender B10, combine Icelandic Provisions Oat Milk Skyr, raw cashews, white beans, lemon juice, minced garlic or garlic powder, salt, and water.
- Blend until completely smooth and creamy.
3- Mix the Dip:
- Pour the blended base into a clear glass mixing bowl.
- Add caramelized onions to the bowl.
- Chop chives using a stainless steel herb grinder and add to the mixture.
- Stir thoroughly with a white silicone spatula until all ingredients are well combined.
4- Serve:
- Transfer the dip to a white ceramic serving bowl.
