Ingredients

🫘 1 can 365 Organic Great Northern Beans Whole Foods Market
🌶️ 1/2 to 1 red bell pepper diced
🧅 1/4 red onion diced
🍅 10-12 cherry tomatoes diced
🥬 4 scallion stalks greens only sliced
🍃 1/2 bunch cilantro chopped
🧀 1/4 cup cotija cheese crumbled
🌶️ Additional chili flakes optional
🧂 Salt
🍈 Lime juice

For the Dressing:

🥣 1/4 cup Chosen Foods Avocado Oil Mayo or Greek yogurt
🍈 Juice from 2 limes
🌶️ 1 tbsp smoked paprika
🌶️ 1 tbsp The Spice House Five Chile Fever Medium Heat Blend chili flakes
🧂 3-finger pinch salt
🧄 2 cloves garlic minced
💧 1 tbsp water


Instructions

1- Char the Corn (Optional):

  • For an added smoky flavor, spread 1 bag of frozen corn or 1.5 cans of corn on a baking sheet.
  • Use a broiler or blowtorch to char until you see brown and blackened edges.
  • Let cool.

2- Mix the Salad Ingredients:

  • In a large wooden salad bowl, combine charred corn, one drained can of 365 Organic Great Northern Beans, diced red bell pepper, diced red onion, cherry tomatoes, sliced scallion greens, and chopped cilantro.

3- Prepare the Dressing:

  • In a clear glass mixing bowl, whisk together Chosen Foods Avocado Oil Mayo, lime juice from two limes, smoked paprika.
  • Add The Spice House chili flakes, salt, and minced garlic.
  • Adjust thickness by adding water if needed.

4- Dress the Salad:
