Instructions

  1. Prepare the Meatballs (Kefta):

    • In a large mixing bowl, combine the ground meat, chopped onion, paprika, cumin, salt, ground cinnamon, chili powder, and fresh cilantro.
    • Mix thoroughly with your hands to incorporate all the spices.
  1. Prepare the Tomato Sauce:
    • Wash and quarter the tomatoes.
    • Grate the tomatoes into a stainless steel bowl, leaving the skins behind.
    • Finely chop the onion and mince the garlic.
  1. Cook the Tomato Sauce:
    • Heat a Happycall Diamond pattern frying pan on medium-high heat.
    • Add olive oil, then sauté the minced garlic and chopped onion until fragrant.
    • Add the grated tomato pulp into the pan, followed by paprika, cumin, salt, chili powder, and cilantro.
    • Stir well and cook for 20-30 minutes, until the sauce thickens and reduces.
  1. Form and Cook Meatballs:
    • While the sauce simmers, form the meat mixture into small balls.
    • Place the meatballs into the thickened sauce, then cover with a glass lid.
    • Cook for about 5 minutes, turning once to ensure even cooking.
  1. Add and Cook Eggs:
    • Crack eggs directly into the sauce around the meatballs.
    • Season the eggs with salt and pepper.
    • Cover and cook for 2 minutes, until the egg whites set.
