Ingredients

🌾 1 1/2 cups Semolina Flour, Bob's Red Mill Semolina
🌾 1 1/2 cups All-Purpose Flour, Generic
🍬 1 Tablespoon Sugar, Generic granulated sugar
🧂 1 Teaspoon Salt, Generic
🥚 1 Egg, Optional, generic
🧁 1 Teaspoon Baking Powder, Arm & Hammer Double Action Baking Powder
🌱 1 Pack Yeast, Fleischmann's Active Dry Yeast
💧 4 1/2 cups Warm Water
🧈 Desired quantity, Butter, Land O Lakes Unsalted Butter
🍯 Desired quantity, Honey, Golden Blossom Honey Genuine Natural Pure Honey

Instructions

1- Prepare the Batter:

  • In a large OXO mixing bowl, combine semolina flour, all-purpose flour, sugar, salt, baking powder, and yeast.
  • If you opt for it, add in the egg.

2- Mix Wet and Dry Ingredients:

  • Gradually pour 4 1/2 cups of warm water over the dry ingredients.
  • Mix continuously with a wooden spoon until a smooth liquid batter forms, ensuring no lumps remain.

3- Blend for Smoothness:

  • Transfer the mixture into an Oster blender or food processor.
  • Blend for 30 seconds, ensuring a smooth and lump-free consistency.

4- Rest the Batter:

  • Return the batter to the mixing bowl.
  • Cover it with Glad Press'n Seal plastic wrap, and allow it to rest in a warm place for 15-30 minutes to activate the yeast.

5- Cook the Crepes:

  • On low heat, warm a cast iron crepe pan.
  • Using a pink/black-handled ladle, pour a scoop of batter onto the pan, spreading it slightly to form a thin circle.

6- Observe and Remove:

  • Cook each crepe for about 2 minutes on one side without flipping.
  • Look for numerous holes forming on the surface, indicating it's ready.
  • Carefully remove with a spatula and place on paper towel-lined plates to cool.

7- Prepare the Sauce:

  • In a small stainless-steel pan, melt the desired amount of Land O Lakes butter over low heat.
  • Stir in the desired amount of Golden Blossom Honey until well combined.

8- Serve:

  • Dip the crepes into the warm honey and butter sauce and indulge yourself.

Prep Time: Mixing and resting: 15-30 minutes
Cook Time: 2 minutes per crepe
Total Time: 20-35 minutes (excluding cooking all crepes)
Servings: 6-8
Equipment: Large Mixing Bowl (OXO), Wooden Spoon, Oster Blender/Food Processor, Glad Press'n Seal Plastic Wrap, Cast Iron Pancake/Crepe Pan, Generic Spatula, Ladle (Pink/Black handle), Small Stainless Steel Pan, Generic Stovetop (Whirlpool Electric Range)
