Hello foodies lovers, I am back with the sweet recipe that is Ichigo Daifuku Mochi. Originating from Japan, Ichigo Daifuku Mochi has become a popular treat worldwide, admired for its delightful texture and burst of flavors. The original Ichigo Daifuku is a combination of chewy mochi, luscious strawberry and sweet red bean paste. In this blog, I will give you a recipe that I have modified from several recipes that I have tried before, because I used whip cream as a substitute for red bean paste, through the steps of creating these delectable Japanese sweets in the comfort of your own kitchen.

Ichigo Daifuku Mochi Recipe

Ingredients:

Rice Flour (Mochiko): ( 75 gram ) The foundation of mochi, this gluten-free flour provides the chewy texture that makes Ichigo Daifuku so enjoyable.

Sugar: ( 1 tablespoon) Balances the sweetness of the mochi and complements the flavor of the strawberries.

Milk: (110 ml) Essential for creating the mochi dough.

Fresh Strawberries: Choose ripe strawberries for a burst of juiciness.

• Whip Cream : (100 gram) Adds a rich and sweet filling to complement the mochi and strawberries.

Potato Starch or Cornstarch: (75 gram) Prevents mochi from sticking and adds a smooth finish.

Salt : (1 tablespoon)

Cooking Oil: (1 tablespoon)

Procedure:

Preparing the Mochi Dough:

•Mix mochiko and sugar in a bowl.

•Gradually add milk, and cooking oil, stirring to create a smooth batter.

•Microwave or Steam the mixture, pausing to stir, until the dough becomes elastic and translucent.

Shaping the Mochi:

•Dust your hands and work surface with potato starch.

•Divide the mochi into small portions and flatten each into a disc.

•Place a strawberry on each disc, add a dollop of whip cream, and encase the filling with the mochi.
