🍯 1 tbsp Honey, e.g., Jarra Honey
🌿 0.5 tsp Cinnamon
🧂 Pinch of Salt

For the Orange Cinnamon Syrup:
🧂 0.25 cup Sugar, approx. 50 g
💧 0.25 cup Water, approx. 60 ml
🍊 Juice of 1 Orange
🍊 Peel of 1 Orange
🌿 1 Cinnamon Stick
🍋 3 tbsp Lemon Juice, freshly squeezed

For the Rosewater Syrup:
🧂 0.25 cup Sugar, approx. 50 g
💧 0.25 cup Water, approx. 60 ml
🌹 0.5 tbsp Rosewater
🍈 Juice of 1 Lime

Toppings/Garnish:
🌰 Chopped Walnuts
🍊 Orange Zest
🌿 Powdered Pistachio
🌹 Dried Rose Petals
🍫 Chocolate Sauce, optional

Frying:
🫒 Frying Oil, e.g., Berio Olive Oil, enough for deep-frying


Instructions

1- Prepare the Dough:

  • In a measuring cup, whisk together activated yeast and room-temperature water. Allow it to rest for 5 minutes.

  • In a large glass bowl, sift together plain white flour and cornflour, adding cinnamon and a pinch of salt.

  • Stir in honey into the activated yeast mixture, then gradually combine with the flour mixture, using an "eight then zero" whisking motion until smooth.

  • Cover the dough with Royal Fresh cling film and let it rise in a warm place, such as a Miele preheated oven at 50°C, for up to 1 hour.

2- Prepare the Orange Cinnamon Syrup:

  • Combine sugar, water, orange juice, orange peel, and cinnamon stick in a small saucepan.

  • Boil over high heat and then simmer for 5 minutes.

  • Stir in lemon juice and strain to remove solids, pouring the syrup into a small white jug to cool.

3- Prepare the Rosewater Syrup:

  • Mix sugar and water in a small pan and bring to a boil.

  • Simmer for 5 minutes before lowering heat and stirring in rosewater and lime juice.

  • Whisk briefly and pour into a jug to cool.

4- Frying the Loukoumades:

  • Heat a substantial amount of frying oil in a saucepan.

  • Drop small spoonfuls of dough into hot oil, frying until golden and crisp.

  • Remove using a metal slotted spoon and drain on paper towels.

5- Serving:

  • Arrange Loukoumades in bowls. Drizzle one set with orange cinnamon syrup, garnishing with orange zest and walnuts.

  • Pour rosewater syrup over the other set, topping with powdered pistachio and rose petals.

  • Optionally, drizzle chocolate sauce for a delicious deviation.
