Ingredients
🧀 ½ pound 227g Kefalotyri cheese, or any hard, yellow Greek cheese like feta or halloumi
💧 Warm water for dipping
🌾 All-purpose flour for dredging
🌶️ Pepper
🫒 ¼ cup olive oil, approximately 60ml
🍋 2 lemon wedges for garnish
Instructions
1- Prepare the Cheese:
- Cut the Kefalotyri cheese into a square, approximately 4x4 inches (10x10 cm) and about ½ inch (1.5 cm) thick.
2- Dipping:
- Dip the cheese into a bowl of warm water, ensuring it is fully submerged.
3- Dredging:
- Coat the cheese with all-purpose flour, optionally seasoned with pepper.
- Press the flour in slightly to form a nice coating.
4- Second Dip:
- Briefly dip the floured cheese back into the warm water.
5- Heating the Skillet:
- Heat ¼ cup of olive oil in a non-stick skillet over medium heat.
- Ensure the oil is hot, nearing the smoking point.
6- Frying:
- Carefully place the prepared cheese into the hot skillet.
- Pan-fry until golden brown on one side, then flip and fry the other side until equally golden brown.
7- Serving:
- Remove the cooked saganaki from the skillet and serve immediately on a white serving plate, garnished with lemon wedges.
