Ingredients
🥒 1 whole English cucumber peeled, halved, seeds removed, grated
🧂 2 teaspoons salt 1 for cucumbers, 1 for mixing
🥛 24 ounces strained Greek yogurt The Greek Gods brand
🧄 1 tablespoon minced garlic
🌿 2 teaspoons finely chopped fresh dill
🍋 2 teaspoons freshly squeezed lemon juice
🍇 2 teaspoons white wine vinegar or white balsamic vinegar
🧂 Freshly ground black pepper to taste
🫒 2 tablespoons Garlic Olive Oil Chef Jean-Pierre's recommended
🍋 Zest from 1/2 lemon
🌶️ A small amount of Mina Harissa Spicy optional
Instructions
1- Prepare Cucumbers:
- Cut off the ends of the cucumber.
- Peel it and slice it in half lengthwise.
- Use a spoon to remove and discard the seeds.
2- Grate Cucumbers:
- Grate the cucumber halves with a stainless steel box grater.
- Use a Chef Jean-Pierre Stainless Steel Strainer set over a glass bowl.
3- Salt Cucumbers:
- Mix the grated cucumbers with 1 teaspoon of salt.
- Allow them to drain for a minimum of 2 hours.
4- Strain Yogurt:
- Place Greek yogurt in another stainless steel strainer over a glass bowl.
- Drain for at least 2 hours.
5- Squeeze Excess Water:
- Press out remaining moisture from cucumbers using hands or a Deluxe Jumbo Potato Ricer.
- Transfer cucumbers to a mixing bowl.
6- Combine Ingredients:
- Add strained yogurt to the cucumbers.
- Mix in garlic, dill, lemon juice, 1 teaspoon of salt, and pepper to taste.
7- Add Acidity and Fat:
- Pour in vinegar and olive oil.
8- Add Lemon Zest:
- Use the Premium Series Zester to grate lemon zest into the mixture.
9- Mix Thoroughly:
- Utilize a silicone spatula to combine all ingredients until uniform.
10- (Optional) Add Heat:
- Stir in a small amount of Harissa for a spicy note.
11- Adjust Seasoning:
- Taste and adjust with additional salt, pepper, or lemon if necessary.
12- Chill and Rest:
- Cover and refrigerate the Tzatziki for at least 2 hours.
