Ingredients
🥄 1 cup semolina, Krinos
🌰 1/2 cup almonds, slivered, Wonderful
🫒 3/4 cup extra virgin olive oil, Lucini
🍊 Zest and juice of 1 orange, preferably organic
🍋 Zest of 1 lemon, preferably organic
🍬 1 cup sugar, Domino
🌿 1 teaspoon ground cinnamon, McCormick
💧 2 cups water
🌼 1 teaspoon pure vanilla extract, Nielsen-Massey
🧂 A pinch of salt
Instructions
1- Prepare the Syrup:
- In a medium saucepan (use "Cuisinart" model 719-16 Chef's Classic Stainless Saucepan), combine the sugar, water, and cinnamon. Stir well and bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat and let it simmer for about 10 minutes until it slightly thickens.
- Remove from heat and stir in the vanilla extract. Set aside to cool.
2- Toast the Almonds:
- In a large non-stick skillet (use "T-fal" E93808 Professional Nonstick Fry Pan), heat the olive oil over medium heat.
- Add the slivered almonds and toast them until they turn golden brown. Remove the almonds and set aside.
3- Cook the Semolina:
- In the same skillet, gradually add the semolina to the remaining oil and stir continuously with a wooden spoon (use "OXO" Good Grips Wooden Spoon).
- Cook the semolina on low-medium heat until it turns a deep golden color and emits a nutty aroma, about 8-10 minutes.
4- Combine Ingredients:
- Reduce the heat to low, carefully pour the prepared syrup into the semolina mixture while constantly stirring to avoid any lumps.
- Add the toasted almonds, orange zest, orange juice, lemon zest, and a pinch of salt. Stir until everything is well incorporated and the mixture thickens.
5- Set the Halva:
- Transfer the mixture into a lightly greased cake pan or mold (use "Nordic Ware" Bundt Pan) and smooth the top with a spatula.
- Allow the halva to cool at room temperature. Once cooled, turn it over onto a serving plate.
6- Serve:
- Garnish with additional ground cinnamon if desired. Slice and serve as a sweet treat.
