Ingredients

Instructions

1- Prepare the Syrup:

  • In a medium saucepan (use "Cuisinart" model 719-16 Chef's Classic Stainless Saucepan), combine the sugar, water, and cinnamon. Stir well and bring the mixture to a boil over medium heat.
  • Once boiling, reduce the heat and let it simmer for about 10 minutes until it slightly thickens.
  • Remove from heat and stir in the vanilla extract. Set aside to cool.

2- Toast the Almonds:

  • In a large non-stick skillet (use "T-fal" E93808 Professional Nonstick Fry Pan), heat the olive oil over medium heat.
  • Add the slivered almonds and toast them until they turn golden brown. Remove the almonds and set aside.

3- Cook the Semolina:

  • In the same skillet, gradually add the semolina to the remaining oil and stir continuously with a wooden spoon (use "OXO" Good Grips Wooden Spoon).
  • Cook the semolina on low-medium heat until it turns a deep golden color and emits a nutty aroma, about 8-10 minutes.

4- Combine Ingredients:

  • Reduce the heat to low, carefully pour the prepared syrup into the semolina mixture while constantly stirring to avoid any lumps.
  • Add the toasted almonds, orange zest, orange juice, lemon zest, and a pinch of salt. Stir until everything is well incorporated and the mixture thickens.

5- Set the Halva:

  • Transfer the mixture into a lightly greased cake pan or mold (use "Nordic Ware" Bundt Pan) and smooth the top with a spatula.
  • Allow the halva to cool at room temperature. Once cooled, turn it over onto a serving plate.

6- Serve:

  • Garnish with additional ground cinnamon if desired. Slice and serve as a sweet treat.
