Ingredients
🌾 500 grams of all-purpose flour, e.g., King Arthur
🍬 50 grams of granulated sugar, e.g., Domino
🧂 0.5 teaspoon salt, e.g., Morton
🧈 50 grams of unsalted butter, softened, e.g., Kerrygold
🍞 50 grams of fresh yeast (or approximately 14 grams of active dry yeast)
🥛 300 ml of whole milk, e.g., Horizon Organic
🍥 100 grams of marzipan, e.g., Odense
🍯 250 grams of brown sugar, e.g., C&H
🧈 250 grams of unsalted butter, e.g., Kerrygold
🍂 20 grams of ground cinnamon, e.g., McCormick
Instructions
1- Prepare the Dough:
- Warm the milk gently in a saucepan until lukewarm. Add the fresh yeast to the milk and stir until dissolved. If using active dry yeast, let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour, sugar, and salt.
- Add the yeast mixture and softened butter to the dry ingredients. Mix until you have a smooth dough. You can use a stand mixer with a dough hook attachment, such as the KitchenAid Artisan, to knead the dough for about 5-7 minutes until elastic and smooth.
- Cover the bowl with a kitchen towel or plastic wrap and let the dough rise in a warm place for about 1 hour, or until doubled in size.
2- Prepare the Topping:
- In a medium saucepan over low heat, melt the butter.
- Stir in the brown sugar and cinnamon until well combined and the sugar is dissolved. Set aside to cool slightly.
- Crumble or grate the marzipan into small pieces, ready to distribute onto the dough.
3- Assemble the Cake:
- Preheat the oven to 200°C (392°F).
- Grease a baking sheet or a rectangular cake pan (approx. 9x13 inches) with butter or baking spray.
- Punch down the risen dough and roll it out to fit the dimensions of the baking sheet or pan.
- Carefully spread the dough onto the prepared sheet, creating dimples all over the dough surface with your fingers.
- Evenly pour the butter and sugar mixture over the dough and sprinkle the marzipan on top.
4- Bake:
- Place in the preheated oven and bake for about 20-25 minutes, or until the edges are golden brown and the topping is bubbly.
- Allow the cake to cool in the pan for a few minutes before transferring to a wire rack.
5- Serve and Enjoy:
- Cut the cake into squares and serve warm or at room temperature. Enjoy!
