You will need:
For about 12 cookies
● 90 g. plant-based margarine (or butter)
● 100 g. white sugar
● 100 g. pumpkin puree
● 180 g. wheat flour
● 0,5 teaspoon of baking powder
● 0,5 teaspoon of baking soda
● 1 teaspoon of cinnamon
● ¼ teaspoon of ground nutmeg
● ¼ teaspoon of salt
● 80 g. dark chocolate chips or chopped chocolate
Preparation
- Preheat the oven to 180°C.
- Mix the sugar and margarine/butter until smooth.
Add the pumpkin puree and mix again.

3.In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
4.Mix the flour mixture with the pumpkin, margarine and sugar mixture.
5.Add the chocolate chips and mix again. (I had different leftover choc-chips so you can see them very different in the picture 😁)
6.Form the dough into balls with your hands (about 1-2 tablespoons of dough per biscuit) and place on a baking sheet on baking paper, leaving space between the biscuits.
7.Bake for about 12 minutes.
8.Once baked, I like to press them to be more flat with a spatula or spoon while they are still hot. Then leave to cool.
