You might wonder, why pumpkin puree in cookies? Well, besides adding a subtle earthy sweetness, it brings a soft, moist texture. The combo of the pumpkin's creaminess and the gooey chocolate chips creates a symphony of flavors in every bite. Trust me; these cookies are a delightful change from the usual suspects.
