💧 125ml Water
🥄 2 tbsp Dashi Powder
🥢 4 tbsp Soy Sauce, such as Kikkoman
🍶 4 tbsp Mirin
🍬 1 tbsp Sugar
🍾 2 tbsp Sake, optional
🥚 4 Eggs
🌱 3 Spring Onions
🌶️ 1 tbsp Shichimi Togarashi or Furikake
🍚 300g Cooked Japanese Short-Grain Rice
🌟 Kecap Manis to serve, optional
Instructions
1- Prep the Ingredients:
- Slice the onion into thin wedges.
- Cut the chicken into bite-sized pieces.
- Slice the spring onions into small rounds.
2- Marinate the Chicken:
- Lay the chicken on a plate in a single layer.
- Splash over the sake, if using, and let sit for 5–10 minutes.
3- Prepare the Sauce:
- In a shallow frying pan, combine water and dashi powder.
- Add soy sauce, mirin, and sugar, stirring to combine. Bring to a simmer over medium heat.
4- Cook the Onion and Chicken:
- Add the onions to the pan and simmer for about 1 minute.
- Add the chicken in a single layer and continue simmering, uncovered, for 5 minutes, flipping halfway through.
5- Prepare the Eggs:
- Crack eggs into a bowl and lightly mix using chopsticks or a fork, aiming for a marbled effect.
6- Combine and Cook:
- Pour two-thirds of the egg mixture over the chicken in the pan, allowing it to gently set.
- After a minute, drizzle the remaining egg and cover briefly with a lid.
- Cook until the eggs are just set but slightly runny.
7- Serve:
- Spoon the rice into serving bowls.
- Top with the chicken and egg mixture, ensuring to include the sauce.
