Pumpkin and oatmeal muffins

Today I decided to make some different muffins, using one of our home-grown pumpkins that we grow in our garden.

I didn't want to put sugar and flour in the muffins and I really didn't know if they would turn out. Here are the ingredients I put in:

  • 4 eggs
  • 240 g. boiled pumpkin
  • 150 g. oatmeal - finely ground
  • 100 g. erythritol
  • 50 g. melted butter
  • 2 vanilla beans
  • 1 tsp. baking powder
  • 1 tsp. cinnamon

First I cleaned, chopped and cooked the pumpkin. Then I pureed it.

I separated the yolks from the whites.

I added the pumpkin puree and all the other ingredients to the yolks.

I beat the whites separately and added them to the mixture.

I mixed them very well.

I poured the mixture into muffin tins and baked them in a preheated oven at 180 degrees.

The muffins turned out very tasty, light and airy.
