Recreate the iconic Mercadão de São Paulo Mortadella Sandwich at home! This famously stacked sandwich combines rich mortadella, melted cheddar, crispy bacon, and sweet caramelized onions, all piled high in a crusty French bread. Perfect for a hearty meal that captures the essence of Brazilian street food.

Ingredients

🍖 500 g Ceratti Mortadella Bologna Tradicional, thinly sliced
🥓 140 g diced bacon
🧀 150 g processed cheddar cheese slices, similar to individually wrapped American cheese slices
🧅 1/2 medium-sized red onion, thinly sliced
🥖 1 large French bread loaf, approximately 100g, equivalent to two traditional rolls


Instructions

1- Prep the Ingredients:

  • Slice the red onion into thin rings and dice the bacon into small pieces.
  • Keep mortadella and cheddar slices ready.

2- Cook the Bacon and Onions:

  • Preheat a YATSO commercial flat-top griddle or non-stick frying pan over medium-high heat.
  • Cook the diced bacon on the griddle until crispy, allowing the fat to render. Slide the bacon aside to keep warm.
  • Use the rendered bacon fat to caramelize the sliced red onion until it becomes translucent and lightly browned. Push onions to one side of the pan.

3- Melt the Cheese:

  • Lay the cheddar cheese slices on the hot griddle surface until they begin to melt and become gooey.

4- Heat the Mortadella:

  • Place the mortadella slices on the griddle. Heat until they're warm, with slightly curled edges, using a spatula to gently warm through.

5- Prepare the Bread:

  • Slice the French bread loaf lengthwise but keep a hinge, ensuring it's not fully separated.

6- Assemble the Sandwich:

  • Spread the melted cheddar cheese evenly on the bottom half of the bread.
  • Layer the caramelized onions over the cheese.
  • Sprinkle the crispy bacon pieces on top.
  • Pile a generous amount of warm mortadella slices onto the sandwich.
  • Close with the top bread half, pressing down gently.

7- Serve:

  • Slice the sandwich in half for easier handling and serve warm.
