Prep Time: 20 minutes
Cook Time: 35-40 minutes
Total Time: 55-60 minutes
Equipment: Casserole dish, silicone brush, skillet, oven
Servings: 6-8
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a casserole dish lightly with cooking spray or oil.
2. Pour 1/4 cup of red enchilada sauce into the bottom of the greased casserole dish. Using a silicone brush, evenly spread the sauce across the bottom.
3. Arrange four flour tortillas on the bottom of the dish, slightly overlapping, plus the half tortilla to cover any gaps.
4. In a skillet, cook 2 lbs of ground beef with minced garlic and sautéed onions until the beef is browned and fully cooked. Drain any excess fat.
5. Add the can of Rotel, drained black beans, and diced green chilies to the beef, combining well. Pour in the remaining enchilada sauce and sauté the mixture for about 5 minutes to infuse the flavors.
6. Spoon roughly a third of the taco meat mixture over the tortillas in the casserole dish, spreading out evenly.
7. Sprinkle a cup of the cheddar jack cheese over the meat layer.
8. Create additional layers by placing more flour tortillas, another third of the meat mixture, a cup and a half of cheese, and some queso fresco crumbled on top.
9. Repeat step 8 for another layer, finishing with the remaining meat and cheese.
10. If desired, top with jalapeno slices for extra heat.
11. Cover the dish with foil and bake in the preheated oven for about 30-35 minutes or until the cheese is bubbly.
12. Remove the foil and broil for the last 5 minutes to get a golden crust on top.
13. Once done, let the lasagna rest for 5 minutes. Cut into squares and serve with a dollop of sour cream and a sprinkle of fresh chopped cilantro.
Cooking Tips:
- For a lighter version, ground turkey can be substituted for ground beef.
- If you're sensitive to spice, feel free to omit the jalapenos or replace them with a milder pepper.
- Let the lasagna rest before serving to allow the layers to set, making it easier to cut and serve.
