🥩 2.5 kg of thick pork rib piece
🌟 2 teaspoons sweet mustard
🧂 2 teaspoons salt
🍬 2 teaspoons brown sugar
🧄 2 teaspoons garlic powder
🌶️ 2 teaspoons paprika powder
🔥 1 teaspoon cayenne pepper
⚫ 1 teaspoon black pepper
🍯 Honey for glazing
🍖 8 tablespoons BBQ sauce
🧈 2 tablespoons butter
🍏 2 tablespoons apple juice
🌽 3–4 corn cobs cut into wedges
🧈 4 tablespoons melted butter
🧂 1 teaspoon salt
🌶️ 2 teaspoons paprika powder
🧄 2 teaspoons garlic powder
🌿 1 teaspoon coriander powder
🧀 2 tablespoons grated parmesan
🍈 Lime wedges and chili-mayo for serving
Instructions
1- Prepare the Pork Ribs:
- Remove membranes and excess bits from the rib piece.
- Rub a thin layer of sweet mustard all over the meat and cover with the spice mix.
- Preheat your oven to 160°C (320°F). Wrap ribs in foil and bake for 2.5 hours.
2- Glaze and Caramelize Ribs:
- Remove the foil, apply honey, increase the temperature to 180°C (356°F), and bake for an additional 20 minutes.
- In a pot, melt the butter, blend in the BBQ sauce, and add apple juice if needed to achieve desired consistency.
- Brush the sauce onto the ribs, return to the oven for 10 minutes to caramelize and set.
3- Cook the Corn Ribs:
- Mix the melted butter with the seasoning ingredients. Dip corn wedges into the mixture.
- Cook in an air fryer at 190°C (374°F) for 10-12 minutes, or in an oven at 200°C (392°F) for about 15 minutes, until golden and crispy.
- Brush with the reserved butter, grate parmesan on top, and serve with lime wedges and chili-mayo.
4- Serve:
- Present the ribs and corn hot, ensuring the sauce is slightly sticky and the meat easily falls off the bone.
- Enjoy with a cold beer and your favorite music for the best experience.
