This twist on the classic uses a combination of blue and regular corn masa to create a colorful and delicious treat. It's ideal for sharing with family and friends during a cozy get-together.

Ingredients:

🌽 1 cup blue instant corn masa mix
🌽 3 cups regular instant corn masa mix
🥄 1/3 cup of lard
🧂 1 teaspoon salt
💧 Water (as needed)
🍗 Shredded chicken with sazón (or taco seasoning)
🌽 Corn husks


Instructions:

  1. Prepare the Corn Husks:
    • Soak the corn husks in hot water for about 10 minutes to soften them. This makes them pliable and easy to work with.
  2. Prepare the Masa Dough:
    • In a large mixing bowl, combine the blue and regular corn masa mixes, along with the salt and lard. Mix them well.
    • Gradually add water to the mixture while kneading until you achieve a play-dough consistency. The dough should be slightly sticky but not cling to your fingers.
  3. Prepare the Filling:
    • Mix the shredded chicken (pre-cooked with chicken bouillon, fresh garlic, and onion, or use rotisserie chicken) with sazón or taco seasoning to taste.
  4. Assembling the Tamales:
    • Select a large corn husk or overlap two to make a wider base.
    • Place a portion of the masa dough on the husk, spreading it evenly over the smooth side.
    • Add some of the seasoned shredded chicken onto the center of the masa.
    • Fold the sides of the corn husk over the filling to enclose it and create a tamale shape.
    • Tie the open end of the husk with a thin strip of corn husk to secure it.
  5. Cooking the Tamales:
    • Arrange the tamales in a steamer, making sure they are upright and not overcrowded.
    • Steam them for about 30 minutes. Once cooked, turn off the heat and let them rest, covered, for an additional 20 minutes before serving.
