In the small and busy city of Pisa, there is a ice cream paradise that offers more than just quality in its elaborations. It allows us to travel and discover different places, through the varied flavors with which they love to experiment to surprise the public.
The Gelateria De' Coltelli is one of the most awarded in the region and has been granted the Innovation Award 2024. It is a place that stands out for working seasonal products, respecting artisanal methods and becoming known for offering fruit flavors a little out of the ordinary, within the concept of natural and organic.
The place where it is located, almost escapes from the hustle and bustle of the city, which doesn't seem to cease in the historic center. If it were not for the proximity to the Arno River and the expectation of walking along it, it is possible that the visit to this part of Pisa, would have been solely and exclusively to taste the promising ice cream.
La **Gelateria De' Coltelli** es una de las más galardonadas de la región y a la que ha sido otorgado el *Premio Innovación 2024*. Es un espacio que se destaca por trabajar productos de temporada, respetando los métodos artesanales y dándose a conocer por ofrecer sabores de frutas un poco fuera de lo común, dentro del concepto de lo natural y ecológico.
El local donde se ubica, casi se escapa del ajetreado vaivén de la ciudad, que parece no cesar en el centro histórico. Si no fuese por la proximidad al Río Arno y la expectativa de pasear a lo largo de este, es posible que la visita a esta parte de Pisa, hubiese sido única y exclusivamente para probar los prometedores helados.
The chef in charge of elaborating the special formula of these ice creams is Gianfrancesco Cutelli, originally from Sicily. He also has a pleasant team at the service of the public. During my visit, I was attended by a couple of friendly girls, patient and very willing to inform us about the process of making ice cream, the origin of the raw material and the important balance of flavors.
I was lucky that, when we arrived, the place had just emptied and we were able to taste and choose our ice creams calmly. Shortly after taking our order, the small establishment was full again.
One thing that led me to keep this ice cream shop on my list of places to visit in Pisa is the fact that they keep the ice cream covered in stainless steel containers, rather than in plain sight. It was the main recommendation about ice cream that several Italian friends gave me the first time I visited the country and yes, it has helped me a lot to find high quality ice cream.
As the sales assistants were very helpful, I wanted to ask them the reason for the use of these individual containers, to verify the information that they had explained to me so long ago. They were very attentive and went to great lengths to explain the importance of minimizing the oxidation process of the ice cream, avoiding contact with air as much as possible and also the importance of maintaining a constant temperature for the entire product in the container, without affecting the creaminess and the original flavor.
I was very happy with my particular lesson of Gelato, ready to order the biggest cone and finally try them. They offer three sizes, Il Goloso is the largest of them and is priced at 6,00 €. We ordered three flavors in each cone, but were told there could have been more flavors (same amount, but with more variety).
Conté con la suerte de que, al momento de llegar, acababa de vaciarse el local y pudimos probar y escoger nuestros helados con calma. Poco después de tomar nuestra orden, el pequeño establecimiento se llenó nuevamente.
Algo que me llevo a tener esta heladería entre mi lista de lugares por visitar en Pisa, es el hecho de que conserven los helados tapados en envases de acero inoxidable, en vez de estar a la vista. Fue la principal recomendación sobre helados que me dieron varios amigos italianos la primera que visité el país y sí, me ha servido de mucho para dar con helados de gran calidad.
Como tenía a las dependientas muy dispuestas a ayudar, quise preguntarles el motivo del uso de estos envases individuales, por comprobar la información que me habían explicado hace tanto tiempo ya. Fueron muy atentas y se extendieron bastante explicando la importancia de minimizar el proceso de oxidación del helado, evitando en lo posible el contacto con el aire y también de la importancia de mantener una temperatura constante para todo el contenido del envase, sin que esto afecte la cremosidad y el sabor original.
Me quede muy contenta con mi clase particular de Gelato, lista para ordenar el cono más grande y finalmente probarlos. Ofrecen tres tamaños, **Il Goloso** es el más grande de ellos y tiene un precio de 6,00 €. Ordenamos tres sabores en cada cono, pero nos dijeron que podrían haber sido más sabores (misma cantidad, pero con más variedad).
Olivello spinoso e menta, limone e liquirizia
Sea buckthorn & mint, lemon and licorice.
The flavor I was most curious about was that of the sea buckthorn fruit, something I had never tasted and was very curious about. I didn't have much idea of what it might taste like and for a moment I thought it would taste like a tree tomato, but in reality the fruit is rather acidic, but without being too aggressive. This flavor was mixed with mint, which made it fresher and also had an interesting texture for a fruit ice cream, creamy and fun to taste.
Along with this flavor, we accompanied the cone with licorice and lemon. Both correct and very successful for those who prefer each of these flavors, I am not such a fan, so the second cone was destined to have to meet all my expectations.
Junto a este sabor, acompañamos el cono con regaliz y limón. Ambos correctos y muy logrados para quien prefiera cada uno de estos sabores, yo no soy tan fan, por lo que la segunda barquilla estaba destinada a tener que cumplir todas mis expectativas.
Cioccolato Venezuela Sur del Lago, Massa di cacao Perú Cuzco e Stracciatella
Of course, I had checked ahead the proposal they had available at the time of my visit, when I go to Italy I am very happy tasting cioccolato fondente, which is basically chocolate ice cream, with a high cocoa content, based on water instead of milk. Ice cream for chocoholics. I also read about the use of cocoa of South American origin in their elaborations and that had me very enthusiastic.
I couldn't be happier to know that they had Venezuelan chocolate from “Sur del Lago”, one of my favorites! It's a pity I forgot the exact percentage of cocoa, I remember asking and being sure it was over 75% but it's a pity I don't remember exactly. A magnificent ice cream.
Another surprise was to see that the previous flavor was not the only cocoa-based option, Massa di cacao is an ice cream made with Peruvian chocolate, although milk-based, but quite good too, softer of course but with the right cocoa flavor.
To balance so much chocolate and on the recommendation of the sales ladies, I accompanied it with a more common flavor that always gives me satisfaction, stracciatella. The combination was very much to my taste, but I have to admit that I would have loved to have ordered the full cone of Sur del Lago chocolate, it is never too much chocolate.
No podía ser más feliz al saber que tenían chocolate venezolano sur del lago ¡uno de mis favoritos! Es una lástima que haya olvidado el porcentaje exacto de cacao, recuerdo haberlo preguntado y estar segura que era superior al 75% pero es una pena no recordarlo con exactitud. Un helado magnífico.
Otra sorpresa fue ver que el sabor anterior, no era la única opción de a base de cacao, Massa di cacao es un helado hecho con chocolate peruano, aunque en base de leche, pero bastante bueno también, más suave por supuesto pero con el correcto sabor del cacao.
Para equilibrar tanto chocolate y por recomendación de las dependientas, lo acompañé con un sabor más común que siempre me genera satisfacción, stracciatella. La combinación estuvo muy a mi gusto, pero tengo que admitir que me hubiese encantado haber pedido el cono completo de chocolate Sur del Lago, nunca es demasiado chocolate.
The Gelateria De' Coltelli has been definitely one of the places in Pisa that I liked the most, totally recommended if we are looking for a quality ice cream in the city. There is not an excessive offer of flavors in the artisan gelaterias, however, in addition to having the usual flavors, here they always offer some option out of the ordinary and I think that's fun.
It is true that the space in the store is quite small, there is only a bench and a few tables outside, although it is right in front of the Arno River and you can sit on the edge of the wall that separates it from the streets, or walk while admiring the colorful facades while enjoying the delicious gelato.
I decided to stay right in front of the ice cream shop, on the river wall, watching the sunset approaching while people continued to enter and leave the ice cream shop with the smile of anyone looking for instant happiness in a Gelato. Worth repeating!
Es cierto que el espacio en la tienda es bastante reducido, hay solo un banco y alguna mesa afuera, aunque está justo en frente del Río Arno y puedes sentarte al borde del muro que lo separa de las calles, o caminar contemplando las coloridas fachadas mientras disfrutas del delicioso gelato.
Yo decidí quedarme justo en frente de la heladería, sobre el muro del río, viendo como se acercaba el atardecer mientras la gente continuaba entrando y saliendo de la heladería con la sonrisa de cualquiera que busca la felicidad instantania en un helado. ¡Para repetir!
