For these purple sweet potato cookies, I created a new recipe. Despite the fact that they did not turn purple (because to the other components in the dough), they taste fantastic. They're a little darker because I used dates as the only sweetener instead of apricots. I couldn't find dried apricots in my kitchen yesterday, and I wasn't in the mood to wait, so I made the most of what I had 🤪😂
