🍠 1 large sweet potato, diced
🫒 1 tablespoon olive oil
🧂 Sprinkle of salt
🌶️ Sprinkle of cumin
🍗 1 pound ground chicken
🥚 1 large egg
🍞 1/4 to 1/2 cup panko breadcrumbs
🌰 1 shallot, finely diced
🧅 1-2 stalks green onion, sliced
🌿 Chopped cilantro
🍋 Zest of 1/2 to 1 lemon
🧂 Sprinkle of salt
🌶️ Sprinkle of black pepper
🥬 Handful of fresh kale per serving
🥣 Pre-made yogurt jalapeño dressing
🌿 Fresh dill, for garnish
Instructions
1- Prepare Roasted Chickpeas:
- Preheat the oven to 400°F (204°C). Drain and rinse the chickpeas, then dry them thoroughly with paper towels.
- Spread the chickpeas on a gold non-stick baking sheet. Drizzle with olive oil, and sprinkle with salt, garlic powder, and dried herbs. Grate Pecorino Romano cheese over the top.
- Roast in the oven for 25–30 minutes, or until crispy and golden.
2- Prepare Roasted Sweet Potatoes:
- Place diced sweet potatoes on the "Our Place" baking sheet. Drizzle with olive oil and sprinkle with salt and cumin. Toss to coat evenly.
- Roast in the same oven for 25-30 minutes, or until tender and slightly caramelized.
3- Prepare Chicken Meatballs:
- In a large white ceramic mixing bowl, combine ground chicken, egg, panko breadcrumbs, shallot, green onion, cilantro, lemon zest, salt, and pepper.
- Mix thoroughly by hand while wearing kitchen gloves. Using a cookie scoop, portion the mixture into meatballs and shape them into flat patties.
4- Cook Meatballs:
- Heat a cast iron skillet over medium heat with some olive oil. Place the meatballs in the skillet and cook until golden-brown on both sides and cooked through, flipping with tongs. Alternatively, bake them at 400°F (204°C) in the oven until cooked through.
5- Prepare Kale:
- Place fresh kale in a grey ceramic serving bowl. Drizzle with yogurt jalapeño dressing and massage gently to tenderize.
6- Assemble the Bowl:
- Add roasted sweet potatoes, parmesan roasted chickpeas, and cooked meatballs to the dressed kale. Drizzle with extra yogurt jalapeño dressing and garnish with fresh dill.
