Homemade Vegan Pizza Recipe

Hey folks.
Recently i've been buying a frozen vegan pizza from #Aldi about once per week. Although i'm grateful they finally started stocking vegan pizza (i asked them about a year ago if they would do so).
i'm not so grateful for the additives / preservatives however so thought it was time to make a #pizza myself from scratch, as i reckon more than half of the listed ingredients are not good for health, toxic even!
So, here goes:
Preparation time: 15 - 20 minutes
Cook time: 10 - 12 minutes
Servings: 2 (or 1 if you're greedy!)
Firstly i made the base:
Base ingredients (i don't measure or weigh, but i'll guess quantities).
- Corn flour (yellow - from Asda) - 1/2 cup
- Chick pea flour (again from Asda) - 1cup
- Wholegrain Spelt flour (from Tesco) - 1/2 cup
- Himalayan salt - 1/2 teaspoon
- Bicarbonate of soda - 1/4 teaspoon
- Turmeric powder - 1 teaspoon
- Freshly ground black pepper - a few twists
- Fennugreek powder - 1/2 teaspoon
- Olive oil - approx. 1.5 tablespoons
- Filtered water - as needed.
Base instructions
Add all dry ingredients to a bowl and mix well.
Add olive oil and mix.
Add water and mix to a not too sticky, not too dry consistency.
Remove mixture from bowl and add to well floured work surface, kneed for a couple of minutes to mix well, sprinking more flour if too sticky.
Add more flour to work surface and roll with a rolling pin (or empty wime bottle :-), adding more flour to surface as you flip and roll so it does not stick to surface.
i made mine about 30 cms diameter and it was quite thin, as i think i actually used less flour than stated above.
Add the base to a baking tray.
Topping ingredients
- Tomato puree - see image for quantity
- Vegan cheese - approx. 100 grams
- 1/2 of a large carrot - grated
- 1/4 of a very large sweet potato - grated
- 1 small onion
- 1 medium tomato
- Herbs/Spices: Turmeric, black pepper, himalayan salt, Basil (or mix it up - go very easy on the salt - i used about 1/8th teaspoon)
Topping instructions
Add tomato puree
Spread tomato puree
Add about 1/2 of the #vegan cheese.
Don't forget to remove it from the plastic and to grate it. Melted plastic doesn't taste very nice ;-)
Grate and add carrot & sweet potato
Thinly slice & chop the small onion, slice the tomato, add both.
Add the remaining grated cheese, sprinkle basil, turmuric powder, black pepper & himalayan salt.
Add to middle shelf of preheated oven 160°c (electric fan-oven).
Cook for about 10 minutes, checking half way through. i switched to grill for a couple of minutes at end to be sure top was well cooked.
Add plates to oven for last minute or two (keeps pizza hot while you eat).
Remove Pizza from oven, using a slice loose under base and slide carefully onto wooden cutting board.
Cut into six peices using a sharp knife & fork to stop pizza moving while cutting, and using slice move to the pre-heated plates.
Serve immediately, savor the taste, chew well and appreciate all the plant and people beings who helped it end up on the table.

Much better quality ingredients than the shop bought one, and i'm pretty sure it cost less. Most expensive item is the vegan cheese £1 per 100g (£1.98 for the pack). The shop bought pizza cost £2.29 (reduced from nornal price of £2.49).
