Googling fabric vs swatooth led me to this link -
https://101blockchains.com/hyperledger-sawtooth-vs-fabric/amp/

In this comparrison the major diffrence is that sawtooth has plugable consensus while fabric is not BFT (byzantine faut tolerant) and only CFT (crash fault tolerant).

While this is very true and makes Sawtooth a better candidate for real Decentralization, Fabric is better for enterprise federations from a reason that is not mentioned in the article.

Fabric support privacy within the network.
In Fabric parties can create there own channel and decide on the forum of each transaction.
Lets say there are four organizations in the network - Google, FB, Amazon and Microsoft.
There can be a main channel where all can see transactions and other channels like FB and Google can create their channel and transact without Microsoft and Amazon exposed to this data.
This is a structure that enables levels of privacy within the network.
In sawtooth all parties can and must validate all data. So if privacy is needed it can be achieved either by side networks (then why not fabric) or by zero knowledge encryption (also expensive then why not fabric).

Anothe DLT that resembles fabric is Corda (by R3) which attacks the privacy issue by sharing facts on need to know basis. But unlike fabric Corda is not a blockchain rather distributed platform.

Hooe thats helpful,
