▶ It is important to mention that iron is in the mineral category, and is one of the main elements that our metabolic system requires to fulfill its bodily functions. Iron is also vital in the production of hemoglobin and myoglobin proteins.

The consumption of plant foods rich in iron is considered an essential dietary practice to avoid pathological conditions of anemia, especially in pregnant women.

It is common knowledge that iron of animal origin is absorbed from the iron sinks produced by plant species, therefore consuming iron-rich meats is the equivalent of a diet rich in iron-rich plant species.

▶ According to information provided by nutritionists, lentils are the vegetable species that provide more iron source in vegetarian diets, and in similar proportion chard, lettuce, parsley, spinach, broccoli, now in relation to the group of nuts that can provide adequate levels of iron are almonds and hazelnuts.
